Ingredients
- 2 cups Baba Amarnath Z Jeerasar Rice (soaked 30 minutes)
1 cup mixed vegetables (carrot, beans, peas, potato)
1 large onion (sliced)
2 tomatoes (chopped)
1 tbsp ginger-garlic paste
2 tbsp ghee or refined oil
1 tsp biryani masala / garam masala
½ tsp turmeric powder
1 tsp red chilli powder
1 bay leaf, 4 cloves, 1 cardamom, 1 small stick cinnamon
Salt to taste
Fresh mint & coriander for garnish
Cooking Steps
Soak and prepare rice:
Wash the Z Jeerasar rice 2–3 times until water runs clear. Soak for 30 minutes and drain.Sauté spices & onions:
Heat ghee in a heavy pan. Add whole spices (bay leaf, cloves, cardamom, cinnamon). Once they crackle, add sliced onions and sauté until golden.Add ginger-garlic and vegetables:
Stir in ginger-garlic paste and cook until raw smell disappears. Add chopped tomatoes and spices (turmeric, chilli, biryani masala, salt). Cook until oil separates.Add vegetables & rice:
Mix in vegetables and drained rice. Stir gently to coat grains without breaking.Add water and cook:
Pour 4 cups of hot water (1:2 ratio). Bring to boil, then reduce heat to low, cover tightly, and cook for 12–15 minutes until rice is fluffy and separate.Finish & serve:
Rest for 5 minutes, fluff gently with a fork, and garnish with mint and coriander.
