Jeerasar Khichdi – The Comfort of Gujarat

Serves: 3–4

🧂 Ingredients:

  • 1 cup Baba Amarnath Z Jeerasar Rice

  • ½ cup moong dal (split yellow gram)

  • 1 tbsp ghee or oil

  • 1 tsp cumin seeds (jeera)

  • 1 green chili (slit)

  • 1 small piece of ginger (grated)

  • 1 pinch asafoetida (hing)

  • ½ tsp turmeric powder

  • 3 cups water (adjust for consistency)

  • Salt to taste

  • Fresh coriander leaves (for garnish)

👩‍🍳 Method:


1️⃣ Rinse rice and moong dal together 2–3 times and soak for 15 minutes.
2️⃣ In a pressure cooker, heat ghee, add cumin seeds, hing, and green chili.
3️⃣ Add grated ginger and turmeric powder, sauté for a few seconds.
4️⃣ Add soaked rice–dal mixture and stir well.
5️⃣ Add salt and water.
6️⃣ Pressure cook for 3–4 whistles (until soft and mushy).
7️⃣ Once the pressure releases, mix lightly with a spoon.
8️⃣ Garnish with coriander and a drizzle of ghee.

 

🌾 Serving Suggestion:

Serve hot with buttermilk, papad, or pickle for an authentic Gujarati meal.
For extra aroma, use Old Raw Jeerasar Rice — it gives that soft yet grainy khichdi texture.
