🧂 Ingredients:
2 cups Baba Amarnath Lachkari Rice
1½ cups mixed vegetables (carrot, beans, peas, capsicum)
1 large onion, sliced
2 tomatoes, chopped
2 tbsp ghee or oil
1 tsp cumin seeds
1 bay leaf, 2 cloves, 1 cinnamon stick
1 tbsp ginger–garlic paste
½ tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
Salt to taste
3½ cups water
Fresh coriander for garnish
👩🍳 Method:
1️⃣ Wash and soak the Lachkari rice for 20 minutes.
2️⃣ In a deep pan, heat ghee, add cumin, bay leaf, and whole spices.
3️⃣ Add sliced onions and sauté till golden brown.
4️⃣ Add ginger–garlic paste and sauté for a minute.
5️⃣ Add tomatoes and cook till soft.
6️⃣ Mix in all spices and chopped vegetables.
7️⃣ Add soaked rice, stir gently, and pour in water.
8️⃣ Cook covered on low flame until rice is fluffy and grains are separate.
9️⃣ Garnish with coriander and serve hot.
🌾 Chef’s Tip:
For rich aroma and perfect texture, use Old Raw Lachkari Rice — it stays fluffy and non-sticky after cooking.
